Then you can go through your document, create the tables as noted above with the white 1pt text behind the label so it auto updates in the TOC. When you insert the auto TOC at the front of the document, the caption will be read and updated as you work, but you won't see it in the main text. I have done this and also made the font size of the text behind the label a font size of 1. Then, highlight the top caption (everything after Table 1) and turn the text white. Then, copy the description only (not the label) and paste it on the next line below the table label so you now have something like this: One potential workaround I see (that I am trying and it seems to work) is to put the table caption in using the word caption feature writing the description as well.
